I don’t know if there’s anything more satisfying than watching a living creature come into the world. But what is incredible to me is chickens. My whole life I’ve eaten eggs. Sunny-side up, poached, souffléd, hundreds upon hundreds of them separated into yolks and whites for recipes. And still, after years of collecting freshly laid eggs from my chickens, after incubating many, many dozens, my brain does not comprehend the transition from egg to chick. How does it get from A to B? At what point is it “alive”?

I’m sure there are answers out there. But right now, with a damp little chickie in the palm of my hand, I don’t really care. It’s simply awesome.
